Have you heard of Cookie + Kate? It’s a delightful vegetarian food blog with delicious recipes and beautiful photos. Although I’m not a vegetarian, I do love cooking with lots of fresh vegetables. Cookie + Kate is one of the first places I go when I get home with a box from my local CSA, especially when I have kale like this!
Kate’s vegan sweet potato, kale, and chickpea soup is delicious, hearty, and can feed a crowd, and you don’t have to worry about most dietary restrictions. You can serve it with French bread (and a little goat cheese for the non-vegans, as I did above). The only changes I made to the recipe were a vidalia onion instead of yellow (because I can get them locally) and barley instead of farro (because I had some left over from another recipe). I add vegetable broth as needed because of how much the barley absorbs. And yes, I make the extra spicy version!
